This expression from Guatemala might catch your eye. The blend of 5 to 18-year-old rums shares a similar profile to aged, grain-based distillates.
Meanwhile, the complex, “dynamic” process used for maturation shares similarities with the Solera method of sherry. In this case, a combination of American whiskey, Port, and sherry casks are used, the latter adding a nutty character to the finish.
Sitting at the top of their range, the rums used for Solera 1893 are made with virgin sugar cane honey and are matured for between 5 and 18 years before going into the solera.
