“Jean Dauvissat and his son Sebastian represent the latest generation of the Dauvissat family, who have been running this esteemed domaine since 1899. The family cellar is nestled beneath their 17th-century house, a space steeped in history. It wasn’t until 1963 that the Dauvissat name was officially on bottles of wine, and since Jean’s passing, Sebastian and Evelyne have been leading the domaine.
The vineyard spans just under 10 hectares, with around 6.5 hectares of premier cru vineyards, in the “Vaillons” and “Montamains” region. Of this, 0.75 hectares are dedicated to “vielle vignes” (old vines) that range from 40 to 65 years old! They also have 0.75 hectares of Grand Cru vines, while the remaining plots, facing northwest, produce their Villages-level wines.
While the cellar is outfitted with the latest modern equipment, their winemaking remains traditional. Most of the 1er cru and Villages wines are fermented and aged in stainless steel, while the Grand Cru and Vielle Vignes Vaillons are treated to fermentation and aging in oak, with about 25% of the oak being new.

Chablis is one of my favorite white burgundies. because it gets very little barrel treatment or malolactic conversion it really expresses the essence of Chardonnay. It’s a great food wine with it’s refreshing acidity, and modest levels of alcohol. It is also quite affordable. Most of us don’t have the wallet for premier or grand crus from cote de beaune but this premier cru is certainly reasonable and even the grand crus can be found for under $100 in some cases.
