We admit that the first thing we thought when we first tried high proof Rivers rum wasn’t “Let’s make a Negroni variation”. But we’re glad our friend Kate Perry from La Maison & Velier did, because this is an oddball victory, with the funky cane juice rum playing perfectly somehow with the rich burnt caramel of Averna, red vermouth, and both chocolate and black lemon bitters. Also includes a sachet of fresh nutmeg to grate over top.
