One of several instances in this portfolio where you can obtain 100% Grand Cru fizz at an entry-level price. Compare to Taittinger Comtes de Champagne, if you care to! This is 50% 2001 and 25% each of ’99 and ’00; about 80% Pinot Noir. This is just fantastic Champagne. Even for Billiot this cuvée has remarkable pretty fragrance. It’s above all the length that impresses; there’s an extension of the mid-palate that seems to clamp a death-grip on the soft palate, increasing intensity as it goes. Cherry, mirabelle, puff pastry, fraise de bois; essentially perfect Champagne, elegant and creamy and long and gracious and full of saffron and confiture.

The firm, focusing spine of acidity is enmeshed with a lovely satinlike texture as this carries notes of baked white cherry and black plum fruit, grilled macadamia nut, white blossoms and candied ginger. Long and minerally on the finish. Pinot Noir and Chardonnay. Disgorged March 2024. Drink now through 2029. 500 cases imported.

A 75-25 blend of pinot noir and chardonnay, like almost all of Billiot’s wines, this does not undergo malolactic conversion, creating a powerfully structured, muscular wine. The fine bubbles add to the briskness of its mouthwatering red fruit, its fruit-skin depth making the finish rich. Pour it with hamachi kama (grilled yellowtail collar).
