Description
The part of the whiskey that evaporates from the barrel in the maturation process is called “Angels Share”. Translated, this means the sip for the angels. The part that is normally lost during storage remains in the wood of the barrel and is called “Devils Cut”. Jim Beam developed a process to extract the concentrated liquid from the wood of the barrel. This uses the dark oak flavor of the bourbon essence to enhance this extra-long aged bourbon whiskey.
