Lejay hand-selects and harvests blackcurrants when fully ripe in July, using only blackcurrants grown in France. Two complementary varieties are used, the powerful and fragrant Noir de Bourgogne with its fine acidity. And the Blackdown, which is sweeter, fleshier and rounder, and combines for a well-balanced cassis liqueur.
