Distilled from estate grown pomaces, pressed to 1 bar, and fermented in closed vats. Gentle pressing ensures the pomace has plenty of juice for fermentation. No water or sugar is ever added to the pomace. Slow, cool ferments produce bright, spicy fruit. Rich and concentrated.
