Every barrel of Colorado Honey is bottled as a single barrel, making it 100% unique. Our local collaboration with Lyons’, Colorado-based Bee Squared Apiaries is a match made in heaven – our spent whisky barrels age their raw honey for 100 days, with each barrel being carefully rotated once a day. Then, after the honey is removed, they return the empty barrel to us, and we finish our aged whisky for another 90 days. The result is well-balanced and smooth with a delightful honey finish (not saccharin-sweet) that still manages to pack a classic whisky punch. Tasting Notes: On the nose, warm, sunny day with bright honey notes and dried apricot. The palate is pleasantly sweet and mellow, and slight earthy smoke. A creamy and allspice finish.
