Paying homage to the sherry making process, Spirit Hound will also utilize a solera aging process where the barrel is never fully emptied. Instead, Spirit Hound will continue to add new batches of their American Single Malt Whisky to meld with previous batches. This process allows the whisky to integrate with older stock, while also adding layers of complexity. This premium whisky is bottled and presented as Bottled in Bond. Spirit Hound’s Sherry Cask-Finished American Single Malt was finished in Sanchez Romate Winery Palo Cortado Sherry. This whisky opens with a nose of sweet praline, rich butterscotch, and a hint of herbal horehound. On the palate, sherry sweetness greets you upfront, followed by a viscous mouthfeel, layered with toffee and the distinctive depth of manuka honey. The finish is where its complexity shines-musty, dry, and warm, with mature sherry notes that linger, creating a well-balanced whisky that shows incredible depth.
