Description
“Bozal” is a Spanish word that means “to be wild and untamed”. This translation aptly describes the types of agave that still grow wild and the traditional, untamed production of mezcal.
It is made from the Tepeztate agave, which grows wild in the untouched mountain regions of Mexico. It is produced using an artisanal method in which the agave hearts are roasted in underground stone ovens, crushed in traditional stone mills and fermented in open wooden barrels. This process makes it possible to capture the unique characteristics of the Tepeztate agave and preserve the mezcal in its pure form.
It embodies the wild nature of Mexico and the artisanal tradition of mezcal production in an impressive way.
