The Chateau Smith Cabernet Sauvignon’s predominant aroma and flavor is a giant, less than fully ripe Bing cherry. There are additional aromas and flavors like roasted red bell peppers and sturgeon smoked on cedar planks. The wine’s tannins are grippy to the point of distraction.
