The non-vintage Cava Dibon Brut Reserve (lot 111409) is based on the classic Cava grape varieties with a secondary fermentation after 16 months in bottle. It has a simple bouquet that has pleasant, light floral aromas. The palate has a crisp citric entry with touches of Clementine and grapefruit with fine delineation towards the fresh, apple-y finish. Light apple aromas are elegant and not over the top, while the tangerine and orange flavors are lean and focused. This is a light-framed Cava with a clean, fast, tasty profile and finish. Not yeasty or heavy at all.
