Description
The Demerara distillery in Guyana has been deeply embedded in the history of sugar and rum production since the 17th century. It is known worldwide for the Wooden Pot Still process and the resulting high-quality rums.
A particular highlight is the rum distilled in 2005 from the rare Versailles Single Wooden Pot Still, the last of its kind in operation in the world.
The Versailles Special Cask Finish rum initially matured for eight years in selected American ex-bourbon barrels and then received a further eight years of maturation in fine French oak barrels for its “Special Cask Finish”. These barrels had previously held ruby red port wines from a single quinta in the Porto region of the Douro Valley in Portugal.
Thanks to this targeted cask finish, the rum develops a complex and extremely tasty aroma profile that is clearly noticeable on the palate.
