Tasting Notes:
Mid-straw in colour, this wine shows ripe fruits with honeysuckle, dried apricots, beeswax and hints of rosewater / lychee. An almost dry Riesling with a rich yet pithy texture, sprightly acidity, with flavours of apricot, almond slivers and even a smidgeon of honeycomb. 2-7 year potential to age and improve in the bottle.
Pairing:
Pairs well with the likes of Chinese food, Cajun cuisine, Tex-Mex (with cilantro), roasted pork, roasted duck or goose
Viniculture:
Early morning hand harvesting, 3 week ferment in stainless at low temps.
4 months aging on fine lees with some lees stirring for some texture and aromatice subtleties.
lightly fined with bentonite so the wine is vegan as well.
