Description

The “Vice Versa” wine is a unique blend that originates from the village of Visan in the Côtes du Rhône AOP. However, it has been declassified to Vin de France due to its unconventional co-fermentation process. The wine is crafted from a single parcel of each grape variety, harvested simultaneously from the same terroir. It consists of an equal blend of 50% Cinsault and 50% Viognier, sourced from certified organic vineyards spanning a total area of 15 hectares. The grapes are carefully harvested by hand and vinified together using indigenous yeasts in stainless steel tanks. After de-stemming, the grapes undergo a six-day maceration period, followed by a co-fermentation press. The wine is then bottled on a fruit day without any filtration, with only a minimal addition of sulfites (30 ppm total) to preserve its natural characteristics.
