The nose, once it’s finished opening up, is a seaside soiree studded with salinity and notes of nori. Salty peat smoke powers the palate, though it’s balanced by mango, cooked apricots, and vanilla. On the finish, the peat is under water, giving way to lemon meringue, whipped cream, and white pepper spice. A delicious and flavorful journey, if a bit short in the end.
